Dark Chocolate with Dried Apple
The Tibães apple, in small pieces, in a bar of dark chocolate.
Dark Chocolate with Dried Apple
She is the filling of your life
In Tibães, in Minho, the Casais family has been reviving and preserving the Porta da Loja apple, an old variety linked to the history of the Tibães Monastery and to the rural memory of the region.
This apple of irregular beauty has already got us used to surprises. Now it comes in small dried pieces scattered through a bar of dark chocolate. The intense taste of cocoa meets the natural sweetness of the fruit, and the apple aroma does the rest.
It is a chocolate with few ingredients. Cocoa mass and cocoa butter give it body, with at least 50% cocoa, and sugar softens the bitterness. The dried Porta da Loja apple makes up 5% of the total, and apple and vanilla flavourings bring out what the fruit already has to give.
The apple is still at hand, at the door, ready for a bite. Now in squares.

A nearly forgotten apple. Now in squares.
