Apple Gin
The Tibães apple in a wide glass, with plenty of ice and tonic.
Apple Gin
The gin of an apple with a story to tell
In Tibães, in Minho, the Casais family has been reviving and preserving the Porta da Loja apple, an old variety linked to the history of the Tibães Monastery and to the rural memory of the region.
Juicy, irregular in its beauty and full of character, this apple challenged its guardians to macerate it and create the Porta da Loja Apple Gin.
The fruit is joined by juniper, coriander, angelica, lemon, orange, cardamom and liquorice, in a combination that makes a fresh, aromatic craft gin.
An apple that jumped into the glass and is ready for new stories. The kind that start in the late afternoon and carry on into the night.
