In Portugal, we show love through food. It was one of the things Deolinda learned from her mother, Aurora, before she learned the recipes for their specialities, and the recipe for the business itself, based in Ponte de Lima (Minho, Portugal). She also inherited her mother's strength and perseverance. Over the years, Deolinda made Quinta dos Fumeiros her own, adding a new tradition to the family's and the region's heritage: innovation.

Story of the piece

Ponte de Lima Folar 600 g

A light brioche dough, refined by the smoke of Minho

In Portugal, we show love through food.

It was one of the things Deolinda learned from her mother, Aurora, before she learned the recipes for their specialities, and the recipe for the business itself, based in Ponte de Lima (Minho, Portugal). She also inherited her mother's strength and perseverance. Over the years, Deolinda made Quinta dos Fumeiros her home, and there she developed the family's and the region's traditions.

It was here that we came across her Folar, and the experience was surprising.

A symbol of Portuguese gastronomy, especially associated with Easter celebrations, folar has its own ingredients and methods, evoking local memories and customs.

At Quinta dos Fumeiros, Deolinda wanted to honour and elevate the tradition. She carefully selected the ingredients for the folar's light, soft brioche dough, and added to it the smoked sausages produced on the farm itself. The result is more than the sum of its parts: the fat, the smoke and the pieces of sausage merge with the soft dough in a combination that exists only here, on this farm. By Deolinda's own hands.

So, each Easter, Ponte de Lima Folar appears as more than just food: it is a story of tradition, togetherness, and a singular gastronomic expression of Minho. Among family and friends, every slice evokes the pleasure of preserving what is worth keeping. At the table, with flavour and affection.

ABOUT SMOKED PORK

The pork used is raised traditionally, with access to natural pastures. Smoking is done with local oak wood, a method that dates back to our ancestors, and prolonged curing allows complex flavours to develop.
