We looked at the clock. It’s not that we were in a hurry.
In fact, we had planned to wait until spring, because we really wanted to see the mountain slopes covered by the fluffy whiteness of the elderflower. But it was almost eight in the evening on a late October day, and we had to fill the missing five or six months.
Meanwhile, the floral and sweet flavour of the Elderflower Liqueur (Licor Flor de Sabugueiro) lingered in our mouth. No wonder these flowers have been attributed healing powers since medieval times; there is a sense of purity. Or, at least, purification. Tiny and fragile, these flowers can be found across the country, but what makes them scarce is the fact that they are harvested 800 meters above sea level and infused into a liqueur using traditional methods and ancestral wisdom known only to its producers, Licores Serrano from Covilhã (Beira Baixa, Portugal).
The clock is merciless. Fortunately, nature has its own cycles.
