The salt you see before you taste it
In the Tagus estuary, Salinas do Samouco were once the country's largest salt producers. Today, Marinha do Canto still holds on, where the salt, stubbornly, remains. It is here that Fleur de Sel is born. On the surface of the salt pans, when conditions are just right, a delicate layer of crystals forms. Gathered by hand, with nets, and with knowledge that has withstood time.
It is the crispness you hear before you feel it. Not for seasoning, but for finishing. To bring out a dish that's already made and awaken what was almost there.
It is more than seasoning. It is the final moment. By the hands of all those at Marinha do Canto who insist on producing it.
