While most bees dream about spring, some are making bitter honey in the depths of winter.
Have you ever spotted bees in December and January? We hadn’t. In the mountains of São Marcos da Serra (Algarve, Portugal), where the arbutus flower blossoms from October to January, bees can be seen out in the cold. That’s where this Bitter Honey (mel amargo) comes from: the depths of winter.
Very sweet in our mouths at first, it quickly develops into a more complex flavour, reminiscent of coffee. It also has that delicious dark brown golden colour.
Truly bittersweet, if you ask us. Like those last bee sightings by the end of the summer.

Storage
Store the jar upright in a cool, dark, and dry place (room temperature). Avoid heat and direct sunlight.
Crystallization
Crystallization is natural in the cold. Revert by gently warming the jar in a water bath.
After Opening
Seal tightly after each use to prevent moisture entry.
Shelf Life
Quality is maintained indefinitely if stored correctly.
